The Product: Gnocchi

The first chapter of Eat Rosetta is gnocchi, because they are one of the most direct expressions of Italian tradition.

In our gnocchi, bread waste is not a message. It is an ingredient inside a process designed to achieve real quality. The goal is not to create a “sustainable product” that needs explaining, but a delicious product people want to choose. The fact that it reduces waste and creates positive impact is part of the story, not an excuse.

A repeatable process

The Method

01. Intercept

The point is not to recover bread once in a while. The point is to turn it into a repeatable process. We intercept unsold bread before it becomes waste.

02. Transform

We select it and transform it into a base that can be used in the kitchen. From there the dough is born and, with the dough, our first products. It is work that combines craft care with organization.

03. Close the loop

Less waste, more value, and a result people genuinely want to eat. This is our way of making an old rule contemporary again: do not throw away, transform.
